Pasta with Cherry Tomatoes, Basil and Feta Cheese

I have finally found a pasta dish that my husband loves. And it is so simple, cherry tomatoes, basil, feta, olive oil and salt and pepper. I was really craving pasta, but I wanted to stay away from the heavier sauces I usually make, something with lots of cream and cheesy, or with pesto or homemade marinara. OK, this marinara isn’t necessarily heavy, but I am getting old, 😀 it gives me heartburn. I found nice cherry tomatoes at the store and I already had lots of fresh basil home, so I decided to go with crumbled feta instead of Parmesan cheese this time. It made it really lovely. In combination with olive oil, it gave enough of creaminess without making it heavy at all. Here is what I did:

 

Pasta with Cherry Tomatoes, Fresh Basil and Feta Cheese



1 package of Spaghetti or Linguine
1/2 lbs Cherry Tomatoes, halved
1/2 lbs feta, crumbled
handful of fresh basil, roughly chopped
olive oil
salt and freshly ground pepper

 

Cook the pasta Al Dente in well salted water. While the pasta is cooking, prepare the tomatoes. Heat some olive oil in the pan and add the tomatoes and cook for about 3 minutes. When pasta is cooked, add about half a cup of boiling water to the tomatoes and add the pasta. Add feta cheese and fresh basil, salt and freshly ground pepper. I always put a bottle of olive oil on the table so everyone can add some just before eating. Serve immediately and enjoy this incredibly fresh and simple dish. It takes about 15 minutes to make it from start to finish!
