My kids have been going crazy lately and I've been needing healthy and quick dinners more and more because with all of my love for cooking, sometimes there is just not enough time or energy left in me to cook what I would like to cook. Here comes this awesome oven baked chicken that is awesome over just about anything. We had it for dinner with spaghetti and leftovers over brown rice. yum.
It is very forgiving so if you don't like or have olives you could replace it with some capers (love those!) or bell peppers, that would be great I think. It is done in under an hour and there is no babysitting it once it goes into the oven. I skipped those because my older son would flee the country if I gave him anything with bell peppers in it so yeah, feel free to add those in if your kids eat anything other than burritos and pickles.
Baked Chicken with Olives and Tomatoes
2 Tbsp of extra virgin olive oil
2 chicken breasts, halved
1 large can of diced tomatoes
1 large yellow onion, sliced
1 cup of olives
3 cloves of garlic, sliced thinly
1 tsp of dried oregano
1 tsp of dried thyme, I didn't have fresh herbs on hand but they would be just lovely in this
1/4 cup of white vine
1/2 cup of shredded mozzarella
salt and pepper
Turn the oven on 375 degrees. Start with seasoning the chicken with salt and pepper and then brown the chicken in the pan with half of the olive oil. Choose an oven proof pan because the chicken finishes baking in the oven. Remove the chicken from the pan and saute the onions for a few minutes and then add the garlic. After a minute add the oil and cook for just a minute or twoand then add rest of the ingredients except the cheese. Stir for another minute and then place the chicken back in the pan and put the whole pan in the oven for about 20 minutes. When the chicken is done, top it with the cheese and put in the oven for another minute or two just to melt the cheese.
Serve on it's own with a side of nice bread or choose something like pasta or brown rice to accompany it. Enjoy!
