This salad was a much needed lunch for all of us in the house after this Easter weekend. We didn’t eat much candy at all, so that was not the problem, but we ate so much ham and fresh baked bread that it made up for all the sweet stuff we successfully avoided. And we decided not to make the lamb yesterday in favor of some more ham, so guess what’s for dinner tonight?
We really needed a salad for lunch.
I never used to like chopped salads, I much proffered bigger pieces of the lettuce and rest of the stuff in my salad, but I’ve learned to love them. Now I think they are fun and anything goes. Plus I love cabbage and it is so much easier to eat it in a chopped salad. This version today was made with lettuce, carrots, onions, chicken, a little bit of grated cheese, pomegranate and tortilla strips.
My mom ate hers very simple with just some olive oil and vinegar, but I am on a cilantro dressing boat right now, so I enjoyed it like that.
This can be a healthy and easy five minute meal if you do some food prep and cook your chicken beforehand.
Chicken and Pomegranate Chopped Salad
3 cups of chopped lettuce
1/2 cup of grilled chicken breast cut in 1/2″ pieces
1/4 cup of roughly grated carrots (or chopped)
1/4 cup of diced purple onion
1/4 cup of pomegranate seeds
1/4 cup of grated cheese of your choice
1/4 cup of tortilla strips
cilantro dressing (I just throw a big fistful of cilantro in my blender with some Greek yogurt or light sour cream, juice of a lime, one large garlic clove, some olive oil, salt and pepper and puree until smooth)
This looks and sounds so good! And the dressing so fresh, can't wait to make this.
