Pumpkin Spice French Toast

How are you? Hanging in there? Or running around crazy like a chicken without a head. Trying to figure out if you have everything in line and ready for Thanksgiving?
I just took my turkey out of the freezer and made all of my pie crusts (I’m making seven hundred), because, why not for the first Thanksgiving at my house? Not enough stress? Haha…BRING IT ON!

Here is a piece of my hard learnt wisdom. Feed you men breakfast on Thanksgiving morning. Saving room for huge yummy dinner that’s coming? No. Bad idea. Give them food and the day will go so much better. And by that I mean, I better eat something or I will start screaming at people around noon just before I take a bite of my right forearm. And that is when I’m just the guest! 😀

So, to avoid all that good stuff,  here is a quick and simple solution for start of our morning. Pumpkin Spice French Toast.  Use whatever bread you want, mine was just plain french bread loaf, but it would have been even better with some brioche bread.

Pumpkin Spice French Toast

8 thick slices of bread
3 eggs
1/3 cup of milk
1/2 cup of pumpkin coffee creamer (ha!)
1 Tbsp sugar
1 tsp of pumpkin pie spice mix
pinch of salt

*for a thicker and crispier batter on the toast, you can add one or two tablespoons of flour into the mixture, I was going for a light coating

oil for frying the bread

Mix eggs, milk, coffee creamer, sugar, salt and pumpkin pie spice, and dip each slice of bread into the batter. Allow the bread to soak up some of the batter before putting it into the heated pan with oil. Fry on medium heat and flip over when one side browns up nicely.
Serve immediately with warm syrup. And I guess I have to write butter. I just don’t have this habit of putting butter on everything, but my husband loves it. Hey, I don’t judge, I have family members that like to put lard and sugar on bread, so butter suddenly seems very attractive, compared! :))))
